STATEN ISLAND, N.Y. — Complex and zesty, sometimes fiery but always intensely flavored — that’s how Sri Lankan food might be described to the uninitiated. For Staten Islanders, it could be an every day affair with deliciousness, courtesy of the largest population of Sri Lankans outside of the Isle of Gems.
There are a few things to know about Sri Lankan cooking, paying mind to its Dutch influence. At the onset, it appears to be similar to South Indian fare although Ceylonese curries are more rich and concentrated. The food isn’t always fire-alarm spicy, although chilies can be a common denominator in many dishes.
